Food and wine naturally compliment each other. An overall guideline to keep in mind is to pair lighter foods with lighter wines and heartier foods with bolder wines. Today, the general rule is there are no rules so you can enjoy any wine with any food as long as they bring out the best in each. Enjoy these recipes with any type of wine you like! There is nothing better than enjoying an evening of great food and wine with friends and family - the ultimate pairing.

Pork Chops in Autumn

4 chops
Sear chops in hot skillet, reduce heat to low
1 cup of garlic, chopped
1 cup onions, chopped
Sprinkle garlic and onions over chops. Add wine and cover for 1 hour or more (can continue to add wine) checking for consistency. Remove lid until a "gravy" has formed. Serve with fresh vegetables and gravy over chops.

Take your favorite flavor of Hidden Creek wine in a tall glass and add vanilla ice cream—a wine float . Delicious, refreshing, satisfying. Perfect as a desert or with company. Suggested wine flavors: Dragonfly, Dew Drop, Hedgehog, Strawberry, BB Bear, Blossoms...any of your favorite flavor.
Pork Chops & Hidden Creek Winery Sweet or Dry Hedgehog Wine

Try our dinner/supper menu. It's absolutely delicious, melts in your mouth and can be prepared in under 30 minutes!
Pork Chops
Four bone-in or boneless pork loins or chops
1 peeled, cored & sliced apple (can be somewhat soft)
approx. 1/3 to 1/2 cup brown sugar
approx. 1 teaspoon French's Spicy Brown Mustard
approx. 1/3 to 1/2 cup Hidden Creek Winery's Hedgehog Apple Wine
In large cast iron skillet, pour in approx. 1/4 to 1/3 cup Heart Smart Vegetable Oil (just until the bottom is completely covered with a thick coating). Heat skillet & oil over high heat until oil is hot. Add pork chops, sprinkle with Kosher course salt, fresh ground pepper & apple slices. Brown both sides (approx. 3-5 minutes per side).
In small bowl, combine brown sugar, mustard & apple wine. Whisk until completely blended. Pour over pork chops. Reduce to medium heat & simmer. Turn pork chops once and simmer until wine has evaporated and there's a glaze in the bottom of the pan.
*Use the sweet or dry according to your taste. I used the Sweet Hedgehog as that's the kind we like.
The rest of the gourmet meal.
Serve the pork chops with a slice or two of the browned & glazed apples on top along with:
- basil carrots (steam fresh carrots till tender crisp, place in melted butter with a sprinkling of dried basil & let set covered until ready to serve),
- potatoes or pierogies - optional
- tossed salad with cubes of fresh apple, walnuts, freshly grated cheese & a vingarette made from oil, apple cider vinegar & a dash of apple wine in place of the water.
For the beverage, of course, choose the sweet or dry Hedgehog Apple Wine.
For dessert, choose apple crisp or apple pie with cheese with Hidden Creek Winery's Hedgehog sweet or dry apple wine. OR, if you prefer, a plate of apples & cheese with the apple wine is also an excellent finish to any meal.
Absolutely delicious and easy to make in under 30 minutes. A gourmet meal never tasted so good!.
